Introductory American Service
 
I saw many posts with weird thoughts of American Service specifically in restaurants so I decided to explain a bit. Because I personally think American Service is a pretty fine dining experience. I remembered a time when my steak came overcook and I explain to the server in a nice way then the manager came and got me a new steak.<<<<They really want customers to be happy<<<<I wouldn’t do that if I was in Taiwan.
In a restaurant American service is usually called "plate service” because the food is already placed in the plate in the kitchen ready to be served to the guests. The serving portion is usually bigger compare to most of the Asian countries. This type of service is used in coffee shops where there is a demand for quick and simple service. It requires minimal training for waiters and waitresses. By the way, some servers like to share about their life or make some kind of joke so don’t be judgy and hesitate to talk a bit with them. 
 
Basic Service Steps in Restaurant:
  1. Greeting & Seating (usually ask customers how’s going and such; also each table have its assigned waiter)
  2. Beverage & Appetizer Order (water and other drinks serve upon request; at some places the bread is refillable. Table d’Hote menu order course here)
  3. Entree & Wine Order (remember to choose the dressing, grain, soup...)  
  4. Salad/Soup/Wine Service (all these depends on what you order)
  5. Entree Service (usually clear the salad and appetizer plates before serving)
  6. Table Check Back (Server would promptly check for doneness, quality, correct order, and refills. Usually more than once and most of the servers would ask “How’s everything?” )
  7. Clear Plates (service ware should be clear constantly and ask for dessert order)
  8. Dessert & After Drink Order (in USA is coffee or tea)
  9. Check Presentation (make sure that the check is accurate and services are finished)
  10. Check Payment (Remember to put tip either on the merchant copy or leave it on the table)

美式服務介紹
我看到很多對於美式服務(特別是餐廳的)有奇怪誤解的po文。我個人覺得其實吃一頓飯不是那麼困難,所以我決定要稍微解釋一下。有一次我的牛排煎得太熟了,就禮貌地向服務生傳達這件事,然後經理就過來致意並帶了一份新的。<他們其實真的希望客人可以吃得開心> 在台灣我可能不會這麼做就是。
在餐廳裡美式服務通常被稱為"餐盤式服務",因為料理在廚房時就已經被擺好在盤子上準備被送上餐桌。跟大部分的亞洲國家比起來,餐點的份量通常偏多。這種方式也被使用在講求快速和簡單服務的咖啡廳,這樣服務人員就不需要受太多的訓練。然後,有些服務生喜歡向客人們分享他們的生活甚至開些小玩笑,所以就不要想太多地跟他們聊聊吧!
 
餐廳內基本的服務流程:
  1. 問候及帶位(通常會問問客人心情如何之類的;然後每張桌子都會有被指派的服務生。)
  2. 點飲料和開胃菜(水或其他飲品視點餐要求;有些餐廳是可以續麵包的。點套餐的話這個步驟點主餐)
  3. 點主餐和酒飲(包含醬料、主食、湯等等)
  4. 沙拉/湯/酒類上餐(根據你的點餐)
  5. 主餐(通常會先收拾桌面上前一道餐點的空盤)
  6. 用餐進行中(服務生會不定時地確認用餐的狀況、品質,確認點餐內容或是加水續點之類的。通常會不只一次,大多的服務生會問說"一切都還可以嗎?")
  7. 收徹空盤(餐盤應該被定時的清理並問甜點的點餐需求)
  8. 甜點和餐後酒點餐(在美國是咖啡或茶)
  9. 確認帳單(確定帳單內容沒有錯誤然後服務就結束了)
  10. 結帳(記得要留下小費在桌上或是帳夾上)
*不同的餐廳順序也可能會有些微不同
 
Also as known you supposed to tip the server at the restaurants and many other occasions such as pizza delivery, valet parking personnel, hairstylist, maid, movers, and etc. Tip is a old-practice of showing appreciation but do you even know many of those workers might not even receive an minimum wage. According to Debby Mayne "Tipping is important. There are so many services where people aren't even paid minimum wage" (About.com). So next time if you find yourself face to face with one of the following service providers, handle your gratitude with grace by following these “tips.” Below is a glimpse of a simple guidelines of tipping.
***Some places have exceptions that 15% of gratuity is already included in the check.***
 
小提醒是不只在餐廳,其他地方例如披薩外送、代客泊車人員、髮型設計師、搬運工等等都需要給予小費。小費是一個不成文規定,為了表現對這些服務你的人們的感激,而且你可能甚至不知道他們領的微薄薪水可能甚至不到基本薪資。就像Debby Mayne說的"小費的重要是因為他們做了這麼多服務卻甚至領不到最基本的薪水"所以下次你遇到給予這些你服務的人們,請記得慷慨地表現你的感激。 
以下是一些關於給予小費的建議,皆以美金計價。
*有些地方可能是例外將15%的小費涵蓋在帳單裡面了。
